Chocolate Sponge Cake
This sponge cake is the perfect Christmas dessert with its melt-in-your-mouth texture and rich chocolate flavour.
Recipe: Whisk together 2 tbsp butter, ½ tsp vanilla, and 3 tbsp jaggery powder. Sift in ½ cup flour, 2 tsp cocoa, ½ tsp baking powder, and ¼ tsp baking soda. Mix in water until smooth. Pour into a greased tin. Bake at 180°C for 25 minutes, and sprinkle cocoa on top when done!
Blueberry Almond Cupcake
A perfect holiday treat combining juicy blueberries and crunchy almonds.
Recipe: Mix ¼ cup almond powder, ¼ cup wheat flour, ¼ cup sugar, and a pinch of baking soda and baking powder. Stir in 1½ tbsp butter, ¼ cup milk, and fold in 50g blueberries. Pour into muffin cups and bake for 20-25 minutes.
Jowar Date Muffins
Healthier, gluten-free muffins to make the Christmas season merrier.
Recipe: Mix 1 cup jowar flour, ½ cup wheat flour, ½ tsp baking powder, and ¼ tsp baking soda. Add 2 tbsp oil, ⅛ cup milk and mix with water until smooth. Fold in 4 tbsp dates, cashews, and raisins. Bake at 180°C for 15-20 minutes.
Appam Cake

Recipe: Whisk 2 tbsp butter, ¼ tsp vanilla, and 1 tbsp curd with 1.5 tbsp sugar. Sift in ¼ cup flour, 1 tbsp cocoa, ½ tsp baking powder, and mix with milk. Pour into greased appam moulds and cook for 2 minutes.

Recipe: Beat 2 tbsp almond flour, 1 tsp oil, and egg yolk. Add 2 tbsp curd, peach pieces, 1 tbsp butter, and jaggery powder. Sift in ½ cup flour, ½ tsp baking powder, and fold in whipped egg whites. Pour into a greased tin and bake at 180°C for 25 minutes.
