This vegetable sandwich is full of fibre and is packed with flavors of green chutney blending perfectly with all the vegetables..
In a blender, add 1/2 tsp chopped green chilli, 1/2 tsp chopped ginger, 1/2 tsp chopped garlic, 1 tbsp chopped coriander leaves, 1 tbsp chopped pudina, 1 tsp lemon juice and 1/4th salt. Blend together into a chutney and keep aside.
Boil beetroot and potato. Cut them in 4 slices each and keep aside.
Take 2 white bread slices and cut the edges.
Apply 2 tsp butter and chutney to both the slices.
On one slice of bread, place 6 cucumber slices, 4 tomato slices, 4 boiled potato, 4 onion slices and 4 boiled beetroot slices.
Sprinkle 1/8th tsp chat masala over the vegetables and cover with the other slice.
Serve with ketchup.
