A perfect combination and way to add all your vegetables into your diet. This sandwich has crunch, is chessy and is super delicious!
To make the green chutney, take a blender and add 1 cup coriander leaves, 1 tsp chopped green chilli, 1/2 tsp chopped garlic, 2 tsp lemon juice, 1/4th tsp salt and blend to obtain a smooth paste. Transfer to a serving bowl and keep aside.
Take 2 slices of white bread and evenly spread 2 tsp butter and 1 tbsp of green chutney on both the slices.
On one bread slice place 6 slices of cucumber, 4 slices of tomato, 4 slices of boiled potato, 4 slices of capsicum, 4 slices of onion and 2 of slices beetroot. Sprinkle 1/2 tsp chaat masala and 1 tbsp grated cheese.
Cover with the other slice.
Cut and serve fresh.
