Vegetable Stew In Coconut Recipe

Vegetable Stew is a mild stew made with coconut, curry leaves, vegetables and mildly spiced green chillies for a rich flavour. Enjoy it hot with rice to reap the benefits of vitamins and antioxidants.

1.0 Boiled Chopped Tbsp(12.0 gm) Potato
1.0 Chopped Tbsp(9.0 gm) Cauliflower
4.0 Chopped Tsp(12.0 gm) Carrot
4.0 Chopped Tsp(10.0 gm) Onion
2.0 Chopped Tsp(6.0 gm) French Beans
1.0 Tsp(4.0 gm) Fresh Peas
1/4 Chopped Tsp(0.53 gm) Green Chilli
1/4 Chopped Tsp(0.54 gm) Ginger
1/4 Tsp(0.59 gm) Jeera
5.0 Number(0.55 gm) Kadi Patta
0.13 Tsp(0.56 gm) Salt
1.0 Tsp(3.0 ml) Oil
100.0 Ml(100.0 ml) Water
  • Heat kadhai on low flame & add 1 tsp oil, 1/4th tsp jeera & allow it crackle.

  • Then add 1/4th tsp chopped green chilli, 7 no. kadi patta & saute well.

  • Then add 4 tsp chopped onion, 4 tsp chopped carrot, 1 tsp peas, 1 tbsp chopped cauliflower, 2 tsp french beans, 1/4th tsp chopped ginger, saute well.

  • Add water & let it simmer.

  • Then add 1/8th tsp salt & cook for 5 minutes.

  • Add 1 tbsp boiled chopped potato, 3 tbsp coconut milk, kasuri methi (Nutritional Twist).

  • Cook well & serve with rice.
