Vegetable Pulao With Kadhi Recipe

Vegetable pulao is prepared with rice and a unique healthy of vegetables and spices. Vegetable pulao is a healthy, protein rich and easy to make one pot meal. Besan kadhi is loaded with good bacteria, which is healthy for the gut, helps in improving the digestion.

  • For besan paste,

  • In a mixing bowl, add 3 tbsp besan, 4 tbsp Nestlé A+ Curd and water to make a smooth paste. Keep aside.

  • For kadhi,

  • In a nonstick kadhai, heat 1 tbsp melted ghee.

  • To that, add 1/4th tsp rai, 1/4th tsp jeera, 5 kadi pattas, 1/2 tsp chopped green chilli, 1/4th tsp haldi, 1/4 tsp salt, 1/4th tsp hing, besan paste and a little water. Mix well.

  • Cover and cook for a while.

  • Heat 1 tbsp oil in a pan.

  • Add 2 bay leaves,4 cloves, 4 black peppercorns,1/4 tspJeera , and 4 pods of green Elaichi.

  • Let the whole spices splutter in the oil.

  • Then add 1/2 tsp chopped red chilli, 1 tsp chopped green chilli, 2 tbsp onion,1 tsp ginger garlic Band saute.

  • Next, add 2 tbsp each of boiled fresh green peas, chopped french beans, carrot, and chopped cauliflower.

  • Season with 1/4 tsp salt and saute all the ingredients well.

  • Now, add 1 cup of cooked rice.

  • Mix gently until the spiced vegetables and rice combine well.

  • Serve with a portion of kadhi.
