Veg Paneer roll is a very healthy recipe. This can be a complete meal by itself. Spicy paneer and veggies are wrapped in a chapatti or paratha. This can be a good brunch option for the kids or can be enjoy by any age group......
To make the roti take a mixing bowl add 1/8th cup wheat flour.
Adding a little water knead it into a soft dough and keep aside.
Take the kneaded dough, roll it in balls, lightly coat it with wheat flour and flatten them to make a circular paratha shape using a rolling pin.
Heat a nonstick tava on a low flame and roast the roti on it.
Allowing it to cook, make sure both sides are browned well. Once done keep aside.
To make the stuffing, heat 2 tsp oil in a frying pan, add 1.5 tbsp chopped onion, 1.5 tbsp chopped tomato, 1 tsp ginger garlic paste, 2 tbsp grated carrot, 1/4th tsp red chilli powder, 1/4th tsp haldi, 1/4th tsp garam masala, 1/4th tsp salt and 1/4 cup cubed paneer.
Sauté properly and keep aside.
Take the previously made roti, spread 1.5 tsp mayonnaise and 2 tsp tomato ketchup evenly across the roti.
Place the stuffing in the centre and spread it in such a manner that the roti can be rolled.
Serve fresh and hot.
