Vegetable khichdi makes a healthy and nutritious one pot meal. When you are in rush or short on time for making dinner, go for this. Khichdi recipe is a mish mash of rice, lentils and vegetables most often served along with kadhi. Dals are considered to be the best anti-aging food items. It is a powerhouse of fiber, protein and other essential nutrients. Curd is an excellent source of good bacteria and aids digestion. It is good for our teeth and bones.
Heat 1 tsp ghee in a pressure cooker or pressure pan.
Add 1/4th tsp jeera, 2 cloves, 5 leaves kadi patta,1/4th tsp haldi, 1/4th tsp hing and saute.
Next, add 1 tbsp each of fresh green peas, cabbage, and carrot and saute well.
Add 2 tbsp tur dal, 2 tbsp rice, and1/4th tsp salt.
Add water, close the lid and pressure cook for up to 3 whistles.
Sprinkle some watermelon seeds for a nutritional twist and serve hot with a bowl of curd.
