Vegetable Fried rice and Chilly Chicken makes a great combination as it makes the meal nutrient dense by adding major nutrients such as carbohydrate protein fats and vitamins.
To make chilli chicken, first, heat 2 tsp oil in a pan.
Then, add 1 tsp each of chopped garlic, ginger and green chilli and mix.
Add 1 tbsp of chopped onions and then add chicken.
Saute all these ingredients well.
Add 2 tbsp each of chopped spring onion, and diced green capsicum.
Season with 1/4th tsp each of salt and black pepper powder.
Add 1/2 tsp soya sauce,1 tsp vinegar, 1 tbsp red chilly sauce and sufficient water.
Add 1 tbsp of cornflour slurry, mix well, cover with a lid and cook.
To make the veg fried rice, in a pan, heat 2 tsp oil.
Add 1/2 tsp ginger garlic paste, 2 tbsp chopped carrot and 1 tbsp each of chopped french beans and green capsicum.
Next, add 1/4th tsp green chilli paste, 1/4th tsp salt,1 tsp soya sauce and 1/2 tsp vinegar.
Stir well and mix well, and add the cooked rice.
Finally, add 2 tbsp of chopped spring onion, 1/2 tsp black pepper powder and mix well.
Serve veg fried rice with the prepared chilli chicken.
