Vegetable Cutlet With Mint Tomato Chutney Recipe

Vegetable cutlet or veg patties is a delicious snack made with mix vegetables. This crispy and tasty veg cutlet can be made as an evening snack and best to serve them hot with mint tomato chutney.

1/8 Cup(21.0 gm) Tomato (Diced)

  • For cutlet

    Heat 1/2 tsp oil.

  • Add 2 tbsp chopped carrot, 2 tbsp chopped french beans, 2 tbsp julienne cabbage, 1/2 tsp green chilly paste, 1/2 tsp ginger garlic paste, 1/4th tsp garam masala, 1/4th tsp salt and mix well.

  • Now add boiled and mashed potatoes and vegetable mixture. Mix well.

  • Shape out tikkis from the mixture and keep aside.

  • Heat 1.5 tsp oil in a pan.

  • Coat tikkis in 2 tbsp breadcrumbs and shallow fry tikki on both the sides until completely cooked.

  • For chutney

    Heat 1/2 tsp oil.

  • Add 4 pounded garlic cloves, 1 dry red chilly, blanched tomato, 1/8th tsp salt, 2 tbsp chopped pudina leaves and saute till golden brown.

  • Blend into smooth chutney.

  • Serve hot cutlets with fresh chutney.
