Chickpea flour omelette is an egg-free omelette recipe perfect for a protein vegan breakfast. A soft, chewy gluten-free vegan omelette.

In a blender, add soaked chole, water and blend well.
In a bowl, add chole mixture, 1 tbsp mashed tofu, 2 tsp chopped spring onion, 2 tsp chopped tomato, 1 tbsp chopped carrot, 1/4th tsp salt, 1/4th tsp red chilly flakes and mix well.
Add 2 tsp oil, spread batter and cook from both sides.
