Veg Malabari Recipe

Veg Malabari curry is a delectable vegetarian curry inspired by a Keralan classic. The delicate coconut balances out the spiciness. It is a flavourful dish that is best served with rotis or rice.

1/2 Cup(71.0 ml) Coconut Milk
0.13 Boiled Chopped Cup(17.0 gm) Potato

1.0 Tsp(5.0 gm) Ginger Garlic Paste

30.0 Ml(30.0 ml) Water
  • Prepreparation,

  • Boil 1 tbsp peas and 1/8th cup of chopped potato, carrot and cauliflower each. Keep aside.

  • For paste,

  • In a blender, add 1 dry red chilly, 1 tsp dhania, 1/2 tsp jeera, 2 tbsp grated fresh coconut, 1 tsp ginger garlic paste, 1 tbsp peanuts, 2 cloves and water as required. Blend well into a paste. Keep aside.

  • For gravy,

  • In a kadhai, heat 2 tsp oil.

  • Add 2 tbsp chopped onion and saute well.

  • When mixed well, add the premade mixture.

  • Add 2 tbsp chopped tomato and mix again.

  • Add water as required, stir, then add 1/8th cup chopped boiled potato, 1/8th cup chopped boiled cauliflower, 1/8th cup chopped boiled carrot, 1 tbsp boiled peas, 1/4th tsp salt, 1/4th tsp red chilly powder and mix well.

  • Finally add 1/2 cup coconut milk and stir.

  • Allow it to simmer.

  • Serve hot with rice.
