Vegetable hakka noodles has variety of vegetables in it and provides various nutrients. Goes well with red chicken thai curry, rich in protein and other micro nutrients.
For Thai Curry
In a kadai, heat 1 tsp oil, add chicken strips and stir fry.
Heat 1 tsp oil in kadai, add 1 tbsp chopped garlic and saute till golden brown.
Add 1/8th cup julienne onion, 1/8th cup julienne capsicum, saute well.
Add 1/2 cup coconut milk, 1/4th tsp salt, 1/2 tsp black pepper powder, 1 tbsp red thai curry paste, chicken and mix.
Allow to simmer, 3 basil leaves on top.
Heat 1.5 tsp oil in a kadai, add 1 tbsp chopped garlic, 1.5 tbsp chopped onion and saute till golden brown.
Add 1/8th cup julienne carrot, 1/8th cup julienne capsicum green, 3 chopped broccoli florets, 1/2 cup chopped spring onion
and stir fry.
Now add 1/8th tsp salt, 1 tsp vinegar, boiled noodles and mix properly.
Add 1/4th tsp black pepper.
Serve hot with Red chicken thai curry.
