A fine tomato curry flavored with Indian spices makes a nutrient dense vitamin C rich vegetable or side to be served with rotis or rice to complete any meal.
For making Tomato Curry
Take a kadhai and heat 1 tsp oil.
Add 1/4th tsp rai, 4 kadi pattas, 1/4th tsp hing, 1 tbsp chopped onion, 2 tbsp chopped tomato, 1/2 tsp red chilly powder, 1/2 tsp ginger garlic paste, 1/4th tsp haldi, 1/4th tsp garam masala, 1/4th tsp salt and mix well.
Add little water and let it simmer.
Garnish with 1 tsp chopped coriander leaves.
Serve hot with chapatti.Enjoy.
