Tomato Coriander Soup Recipe

Simply seasoned with coriander, tomato coriander soup makes a delicious, light and healthy lunch or dinner. In spite of containing basic ingredients available in every kitchen, this soup is colourful and full of flavour. Tomatoes have been found to be the richest source of the antioxidant lycopene, which has been associated with reduced risk of cancer and heart diseases. They are known to reduce inflammation and water retention in the body as well.

As Required(125.0 ml) Water
  • Melt 2 tsp butter in a frying pan at a low flame and add 3 tbsp chopped onion.

  • Once the onions become slightly transparent, add 4 tbsp chopped tomato, 1 tsp coriander leaves, 1/4th tsp salt and sauté.

  • Once slightly cooked and reduced, add a little water.

  • Cover and allow the soup to cook.

  • Once completely cooked, pour in a grinding jar and blend it till a smooth consistency is obtained.

  • Garnish with a coriander leaf.

  • Serve hot.
