Toasted Couscous Salad With Asparagus Recipe

This very fulfilling salad, is loaded with protein and fiber. Toasted couscous gives it a very nutty and delicious flavor !

150 Ml(150.0 ml) Water
1/8 Powder Tsp(0.37 gm) Black Pepper
1/4 Tsp(1.0 gm) Salt
1 Grated Tsp(4.0 gm) Garlic
1 Chopped Tsp(0.92 gm) Coriander Leaves
2 Tsp(5.0 ml) Olive Oil
2 Tsp(8.0 ml) Lemon Juice
2 Chopped Tbsp(25.0 gm) Tomato
2 Chopped Tbsp(16.0 gm) Onion
1/4 Chopped Cup(32.0 gm) Asparagus
3 Tbsp(46.0 gm) Couscous
  • In a pan, add 3 tbsp dry couscous and roast until golden brown.

  • In a kadhai, add water, add toasted couscous and 1/4th cup chopped asparagus.

  • Cover and cook for 15 minutes.

  • In a bowl, add cooked couscous, boiled asparagus, 2 tbsp chopped onion, 2 tbsp chopped tomato, 1 tsp grated garlic, 2 tsp lemon juice, 2 tsp olive oil, 1 tsp chopped coriander leaves, 1/4th tsp salt, 1/8th tsp black pepper powder.

  • Mix well and serve fresh.
