Til gajak is a traditional sweet made North India, especially during the festival of makar sakaranti. It is a super delicious combo made of white sesame seeds, which are energy dense seeds and are not only a powerhouse of calcium but are also rich in protein, phosphorus, iron, fibre and various other nutrients. Furthermore, even jaggery is rich in iron and potassium. This dessert, when consumed in small portions, are super beneficial for kids as well as adults.
For making Til Gajak
Heat a frying pan, roast 3 tbsp white til and keep aside.
Heat another frying pan, add 2 tbsp sugar, add little water as required and stir.
Once the sugar dissolves, add 1 tbsp ghee and previously roasted white til.
Mix continuously until the consistency becomes slightly thicker and starts sticking to each other.
Cool and store in an airtight container.
Serve fresh and at room temperature.
