The Vegetarian Thai Massaman Curry Recipe, is a fun recipe to make that is packed with flavors from lemon grass, ginger and peanuts. It is loaded with Protein, Amino Acids.

For Massaman Curry Paste
In a grinder add roasted coriander seeds, roasted cumin seeds,1/8th tsp white peppercorn,1/3rd tsp cinnamon powder,1/8th tsp nutmeg powder,1/8th tsp green cardmom powder,1/8th tsp cloves powder,2 number dry red chilly and grind it in a fine powder.
Add into the 1/8th cup diced onion,2 tbsp chopped lemongrass,1 tbsp chopped garlic,2 tbsp chopped coriander leaves,10 gm chopped galangal and grind it in a smooth paste.
For Tofu Curry
Heat 1 tsp oil in a pan add into the 1 tbsp diced onion and saute it well.
Add into the 1 tsp prepared massaman curry paste,1.25 tbsp coconut milk,1/4th cup diced tofu, water as required,1/2 tsp soya sauce, mix and cook it well.
Garnish with 1/2 tbsp chopped coriander leaves and serve hot.
