Preparation for stuffing

Slit brinjal into 4 parts and keep aside.
- Step 3
In mixing bowl, add 2 tbsp chopped onion, 1 tbsp peanut powder, 1 tsp white til, 3 tbsp dry coconut, 1/2 tsp chopped coriander leaves, 1/2 tsp ginger garlic paste, 1 tsp tamarind pulp and water as required.

Now add 1/2 tsp salt, 1/2 tsp haldi, 1/2 tsp dry mango powder, 1/2 tsp red chilli powder and mix well.

Stuff the mixture into the slit brinjal.

Preparation for baigan
- Step 7
In a pan, heat 2 tsp oil.
- Step 8
Add 1/4 tsp rai, 1/8 tsp jeera, stuffed brinjal and stuffing mixture.
- Step 9
Cover and simmer.
- Step 10
Serve hot with rotis or rice.
