  • Preparation for stuffing

  • Slit brinjal into 4 parts and keep aside.

  • In mixing bowl, add 2 tbsp chopped onion, 1 tbsp peanut powder, 1 tsp white til, 1 tbsp dry coconut, 1/2 tsp chopped coriander leaves, 1/2 tsp ginger garlic paste, 1 tsp tamarind pulp and water as required.

  • Now add 1/2 tsp salt, 1/2 tsp haldi, 1/2 tsp dry mango powder, 1/2 tsp red chilly powder and mix well.

  • Stuff the mixture into the slit brinjal.

  • Preparation for baigan

  • In a pan, heat 1.5 tsp oil.

  • Add 1/4 tsp rai, 1/8 tsp jeera, stuffed brinjal and stuffing mixture.

  • Cover and simmer.

  • Serve hot with rotis or rice.
