- Step 1 Slit 5 brinjals horizontally and vertically and keep aside.
- Step 2 In a bowl, add 2 tbsp chopped onion, 1 tbsp peanut powder, 1 tsp white til, 3 tbsp grated dry coconut, 1/2 tsp chopped coriander leaves, 1/2 tsp ginger garlic paste, 1 tsp tamarind pulp, little water and mix well
- Step 3 Add 1/2 tsp salt, 1/2 tsp haldi, 1/2 tsp dry mango powder, 1/2 tsp red chilli powder and mix well.
- Step 4 Give it a Nestle Twist by adding sunflower seeds
- Step 5 Stuff the brinjal with the prepared spiced masala and set aside
- Step 6 Heat a pan with 2 tsp oil, add 1/4 tsp rai, 1/8 tsp jeera and let it crackle
- Step 7 Add stuffed brinjal and add the remaining masala
- Step 8 Mix well and cover and cook until soft over low flame
- Step 9 And it's ready
- Step 10 Serve hot with rotis or rice.
