preparation for stuffing
Slit brinjal into 4 parts and keep aside.
In mixing bowl, add 2 tbsp chopped onion, 1 tbsp peanut powder, 1 tsp white til, 1 tbsp dry coconut, 1/2 tsp chopped coriander leaves, 1/2 tsp ginger garlic paste, 1 tsp tamarind pulp and water as required.
Now add 1/2 tsp salt, 1/2 tsp haldi, 1/2 tsp dry mango powder, 1/2 tsp red chilly powder and mix well.
Stuff the mixture into the slit brinjal.
preparation for baigan
In a pan, heat 1.5 tsp oil.
Add 1/4th tsp rai, 1/8th tsp jeera, stuffed brinjal and stuffing mixture.
Cover and simmer.
Serve hot with rotis or rice.
