A smart way of inclusion of vegetables like spinach, which usually disliked by children but highly nutritious is the spinach rice. Loaded with iron and fiber spinach rice is easy to cook, attractive to look and delicious to taste making it an idle meal option.
Cook 3 tbsp rice and keep aside.
Take 1/2 cup spinach, blanch, blend into a puree and keep aside.
Heat 1 tsp oil in a frying pan along with 1 bay leaf, 2 cloves, 1/2 tsp jeera, 2 tbsp chopped onion and sauté.
Once the onions are slightly transparent, add 1 tsp ginger garlic paste, previously cooked spinach puree and mix.
Mixing continuously, add 1/4th tsp red chilli powder, 1/4th tsp dhania powder, previously cooked rice and 1/2 tsp salt.
