One of the best continental dishes spinach corn soup is a heart-warming, beautiful, hearty, full-flavoured soup. Wholeness of spinach and sweetness of corn kernels, flavoured with garlic in butter appeals to children as well as adults. Spinach is rich in carotenoids along with iron, folic acid, calcium, vitamin C, vitamin A and vitamin K1.
Heat 1 tsp butter in a frying pan, 1/2 tsp chopped garlic,1/4th tsp ginger, 1 tbsp pureed onion and sauté.
Once slightly cooked, add 1/4th cup pureed spinach and sauté.
Once it starts to simmer, add a little water, 2 tbsp corn, 1/8th tsp salt, 1/8th tsp black pepper powder and mix well.
Transfer to a serving bowl and garnish with cream.
