Spinach Coconut Rolls Recipe

Crispy deep fried rolls stuffed with spinach and grated coconut making a nutrient and energy dense snack.

1/2 Cup(111.0 gm) Potato(Boiled,Mashed)

1 Tsp(0.92 gm) Coriander Leaves(Chopped)

1/4 Tsp(1.0 gm) Green Chilli Paste

1/8 Tsp(0.23 gm) Ginger(Grated)

1/2 Tsp(2.0 ml) Lemon Juice

1/8 Tsp(0.56 gm) Salt

For Frying(15.0 ml) Oil
  • To prepare the mixture, add 2 tbsp of grated fresh coconut and 1 tbsp of chopped palak into a bowl.

  • Add 1/4th tsp of green chilli paste, and 1/8th tsp each of grated ginger and salt.

  • Drizzle 1/2 tsp lemon juice and sprinkle 1 tsp of chopped coriander leaves.

  • Mix all the ingredients well.

  • Next, add 1/2 cup of boiled, mashed potato and 1 tbsp cornflour into a mixing bowl.

  • Knead into a smooth dough.

  • Take a small portion of the dough and add the mixture.

  • Shape carefully into rolls.

  • Coat the rolls with 2 tsp bread crumbs.

  • Heat sufficient oil in a frying pan and deep fry until golden brown.

  • Spinach coconut rolls are ready to serve.
