Crispy deep-fried spinach coconut rolls are stuffed with goodness of spinach and grated coconut and deep-fried to perfection, imparting a rich flavour, crunchy texture and making a nutritious, guilt-free snack option.

To prepare the mixture, add 2 tbsp of grated fresh coconut and 3 tbsp of chopped palak into a bowl.
Add 1/4th tsp of green chilli paste, and 1/8th tsp each of grated ginger and salt.
Drizzle 1/2 tsp lemon juice and sprinkle 1 tsp of chopped coriander leaves.
Mix all the ingredients well.
Next, add 1/2 cup of boiled, mashed potato and 1 tbsp cornflour into a mixing bowl.
Knead into a smooth dough.
Take a small portion of the dough and add the mixture.
Shape carefully into rolls.
Coat the rolls with 2 tsp bread crumbs.
Heat sufficient oil in a frying pan and deep fry until golden brown.
Spinach coconut rolls are ready to serve.
