A sumptuous meal rich in plant-based protein, soya khichdi is popular comfort food to heal and replenish the body with necessary nutrients. Bone friendly sesame seeds give a bonus boost of calcium.

Before cooking, soak 2 tsp of soya granules.
In a pressure cooker, heat 1 tsp ghee.
Add 1 tsp jeera and let it crackle.
Next, add 1/4th cup rice, the soaked soya granules and mix well.
Add 1/8th tsp salt,1/4th tsp each of red chilli powder and haldi and 2 tbsp tur dal.
Add a sufficient quantity of water, and stir.
Close the cooker with its lid and let the khichdi cook for 4 whistles.
Remove and serve, adding 1 tsp of chopped coriander leaves as a garnish.
Sprinkle white sesame seeds on top for a nutritional twist.
