Sindhi Kadhi Chawal is a vegetarian curry made with vegetables, tamarind, curry leaves and green chillies. A great healthy option for vegetarians !
In a kadhai, add 2 tsp oil, 1/4th tsp hing, 1/4th tsp rai, 1/8th tsp methi seeds, 1/4th tsp jeera 4 kadi patta, 2 tsp besan and roast well.
Then add water, tomato puree, 1/4th tsp haldi, 1/4th tsp red chilly powder, 1/4th tsp salt, 1 chopped drumstick and mix well.
Add 1 tbsp chopped french beans, 1/8th cup chopped potato, water, 1/4th tsp grated ginger, cover and cook.
Add 2 tsp tamarind pulp and mix well.
Garnish with 2 tsp chopped coriander leaves.
