Shengdana aamti is a delicious traditional Maharashtrian dish, specially prepared during Navratri or other religious fasting days. It's a wholesome meal that provides healthy fats and a good dose of dietary fiber and protein.
In a mixing bowl, add 1/2 cup of roasted peanuts.
To this, add 1 tsp green chilli paste, 1/4th tsp salt and mix.
Add sufficient water, and blend.
In a heated kadhai, add 1 tsp oil.
Add 1/4th tsp jeera and let it crackle.
Add the blended mixture
Add some more water and mix well for a few minutes.
Garnish with 1/2 tsp of chopped coriander leaves.
Best served hot with a portion of cooked millet and a cucumber carrot salad.
