Sabudana Vada is famous Maharshtrian snack. This snack time energy rich recipe is easy to make and easily packed in a lunchbox as well. Pair it with some mint chutney and relish its mouth watering flavours.
Roast 2 tbsp peanuts and grind it. Keep aside.
Soak 1/4th cup sabudana. Keep aside.
Boil and mash 1 medium size potato and keep aside.
In a mixing bowl, add soaked sabudana, 1/4th cup boiled and mashed potato, ground peanuts, 1/4th tsp chopped green chilli, 1/4th tsp jeera, and 1/2 salt.
Mix all the ingredients well.
Add 1/2 tsp chopped coriander leaves and mix again.
Roll the mixture into balls and press gently.
In a kadhai, heat oil for frying.
Deep fry the vadas till they turn golden brown.
Serve hot with mint chutney
