Garlic potato soup is a heartwarming, beautiful, hearty, full-flavoured soup. This soup is creamy without cream, slightly sweet due to the presence of caramelized onions, and as cosy as your favourite blanket. It’s nutrient-dense and bone warming.
Heat 2 tsp butter in a frying pan at a low flame. Add 1 tbsp diced onion and sauté.
Once the onions start turning translucent, add 2 tsp garlic and sauté.
Once slight aroma starts coming, add a little water along with 4 tbsp diced potato, 1/4th tsp salt and 1/4th tsp black pepper.
Cover allowing it to simmer.
Once cooked, pour the soup in a blender and blend until a soup like consistency is obtained.
Garnish with an onion slice and a coriander leaf.
