Rice and cucumber pancake is a delicious option for breakfast and can be served as a mid-day meal or even snack. It is a simple and healthy recipe made for pancake lovers which provides you with right nutrition.
In a mixing bowl prepare pancake batter by adding 1 tbsp rice flour, 1 tsp besan, 1/8th tsp chopped green chillies, 1/4th tsp ginger garlic paste, 2 tbsp grated cucumber, 1 tbsp suji and mix well.
Add 1 tsp chopped coriander leaves, 1/4th tsp Salt and mix again.
Now, to fry the pancakes heat a frying pan and pour a ladle full of prepare batter into the heated pan.
Add oil from the sides of pancake and cook, flip the pancake and cook from both sides.
Serve with your favorite chutney and ketchup.
