Usual bean rice flavored with the freshness of raw mango, making it a vitamin rich complete dish is an idle lunch or dinner option.
Cook 3 tbsp basmati rice.
Cook 2 tbsp rajma.
Take 2 tbsp chopped tomato and make puree.
Take a pan and heat 1 tsp oil, add 1/4th cup julienne cut onion,1 tsp ginger garlic paste, 2 tbsp grated raw mango, 1/8th tsp salt and saute well.
Now add cooked basmati rice and mix well.
Flavor with 1/2 tsp oregano mix slightly.
Take another pan and heat 1 tsp oil, add 1/4th cup julienne cut onion, cooked rajma, tomato puree ,1/8th tsp salt and water as required.
Take a serving bowl and add few portions of cooked rice and then add some portions of cooked rajma gravy. Alternatively layer gravy and rice.
Garnish with coriander and serve hot.
