Rabdi is a delicious, nutritious condensed milk dish that packs a great energy boost to the body. The addition of chopped dry nuts enhances the content of calcium, vitamins A and C, and protein.
In a pan heat 1 cup milk, and let it boil for a while.
Stick the cream that separates from the milk to the sides of the pan with a spatula.
Let it boil again on medium heat, being careful not to burn the cream.
Keep separating the cream from the boiled milk and repeat this process 5 times.
Now to this condensed mixture, add 2 tbsp sugar, 1/8th tsp green cardamom powder, and 1/2 tsp kesar strands.
Allow the mixture to simmer for 2 mins more.
Now, add 2 tsp each of chopped cashew, badam, and pista.
Let it cool and serve chilled.
