Pumpkin is a plump, nutritious orange colored squash rich in Vitamin A and other vitamins and minerals. Pumpkin blends well with coconut milk spreads beautiful aroma. A naturally sweet and mildly spiced twist to regular muffins.
In a mixing bowl, add 3 tbsp oil and 3 tbsp powdered sugar and mix well.
Then, add 1/2 cup of maida and oats flour and 2 tbsp of grated pumpkin.
Add 1/4th tsp each of vanilla extract, baking soda, and baking powder and 1/8th tsp salt.
Mix all the ingredients well.
To this, add 1/4th cup of orange juice, 1/2 tsp of pumpkin seeds, mix well and knead into a dough.
Scoop into prepared muffin cups.
Bake muffins at 180 degrees for 20 mins.
Remove from the oven and keep aside to cool.
