Pumpkin Muffins Recipe

Pumpkin is a plump, nutritious orange colored squash rich in Vitamin A and other vitamins and minerals. Pumpkin blends well with orange juice and spreads beautiful aroma. A naturally sweet and mildly spiced twist to regular muffins.

1/2 Cup(64.0 gm) Maida
1/4 Cup(60.0 ml) Orange Juice
2.0 Grated Tbsp(18.0 gm) Pumpkin
1/2 Tsp(2.0 gm) Pumpkin Seeds
3.0 Powder Tbsp(33.0 gm) Sugar
1/4 Tsp(0.89 gm) Baking Powder
1/4 Tsp(0.83 gm) Vanilla Extract
1/4 Tsp(1.0 gm) Baking Soda
0.13 Tsp(0.56 gm) Salt
3.0 Tbsp(24.0 ml) Oil
  • In a mixing bowl, add 3 tbsp oil and 3 tbsp powdered sugar and mix well.

  • Then, add 1/2 cup of maida and 2 tbsp of grated pumpkin.

  • Add 1/4 tsp vanilla extract, 1/4 tsp baking soda, and 1/4 tsp baking powder and 1/8 tsp salt.

  • Mix all the ingredients well.

  • To this, add 1/4 cup of orange juice, 1/2 tsp of pumpkin seeds, mix well and knead into a dough.

  • Scoop into prepared muffin cups.

  • Bake muffins at 180 degrees for 20 mins.

  • Remove from the oven and keep aside to cool.
