Pumpkin is a plump, nutritious orange colored squash rich in Vitamin A and other vitamins and minerals. Pumpkin blends well with coconut milk spreads beautiful aroma.
1/2 cup coconut milk
Heat ghee in a karahi, add the grated 1 cup grated pumpkin and cook till the water evaporates.
Add 1/2 tbsp ghee, add the 1 tsp chopped cashew nuts, 1 tbsp chopped pistachio , 1 tbsp chopped almonds and 1/2 tbsp raisins and roast them well.
Add 1/2 cup coconut milk and mix it properly. Add 1.5 tbsp sugar and stir.
Sprinkle the 1/8th tsp cardamom powder, mix well.
Simmer, cover and allow it to cook.
