Pumpkin Cutlet is a tasty, healthy cutlet recipe and is easy to make at home. This cutlet packed with Vitamins and Antioxidants.

In a pan heat 1 tsp oil,1/2 tsp mustard seed, 4 curry leaves, 1/8 tsp asafoetida, 1/4 tsp red chilli flakes, 1 tbsp chopped onion and saute it well.
Add into the boiled pumpkin, 1/4 tbsp sambhar masala, 1/4 tsp salt, mix and mash it well.
Remove the mixture in a mixing bowl and add 2.5 tbsp bread crumbs, mix it well.
Make small round cutlets and heat 1 tsp oil in a pan.
Coat cutlet with 2 tbsp semolina and shallow fry the cutlet till golden brown in color.
