Pumpkin is a plump, nutritious orange colored squash rich in Vitamin A and other vitamins and minerals. Pumpkin blends well with coconut milk spreads beautiful aroma. A naturally sweet and mildly spiced twist to regular bajra porridge.
Melt 1 tsp ghee in a frying pan at a low flame, add 3 tbsp bajra and start roasting.
Once the bajra is roasted pour in the required amount of water and stir properly.
Add 1/4th cup grated pumpkin along with 1 tbsp jaggery and 1/8th tsp cinnamon.
Making sure all the ingredients are mixed properly, allow it to simmer for a few minutes until the desired consistency is obtained and transfer to a serving bowl.
Garnish with almond slices.
