- Step 1 In a blender, add 1/8 cup diced onion, 1/8 cup diced tomato, 1/2 tsp chopped green chili, 1/2 tsp chopped ginger, 1/4 tsp dhania powder, 1/4 tsp haldi and 1/4 tsp red chili powder.
- Step 2 Blend everything to a smooth puree
- Step 3 Heat a kadhai with 2 tsp oil, add 1/8 tsp hing, 1/4 tsp jeera and let it crackle
- Step 4 Add 1/2 cup julienne potato, parwal slices and saute it
- Step 5 Add tomato puree, a little water to adjust the consistency and mix well
- Step 6 Cook over low flame until vegetables are soft
- Step 7 Add 1/4 tsp garam masala, 1/4 tsp salt and mix well
- Step 8 Garnish with 1/2 tsp chopped coriander leaves
- Step 9 Give it a Nutritional Twist by adding white sesame seeds
- Step 10 Serve hot with chapati.
