A complete wholesome meal that balances taste and nutrition, potato pulao provides energy to fuel the body's growth and development.
To start preparation, soak, and cook the basmati rice and keep aside.
Then, in a kadhai, add 2 tsp oil.
Add whole spices like 1 pod each of star anise, green elaichi, bay leaf, and clove.
Add 1/8th a cinnamon stick and 1/4th tsp jeera and let the spices roast well.
Add 1/2 tsp chopped garlic and 1/8th cup of julienned onion and saute well.
Next, add 1/4th cup of chopped potato and 1/4th tsp each of haldi, red chilli powder, and garam masala.
Sprinkle 1/2 tsp of chopped pudina leaves and 1/4th tsp salt.
Mix all the ingredients well, and add sufficient water.
Cover with a lid & cook.
When the potatoes are tender add the cooked basmati rice.
Mix well and serve hot with raita or salad.
