Potato onion soup is a comforting, visually appealing, and flavourful soup. This soup is naturally creamy and has a slight sweet flavour due to light fried onions. It is nutrient dense and comforting for cold days.

Heat 1 tsp butter in a frying pan at a low flame, add 1/8th cup diced Onion and sauté.
Once the onions turn slightly transparent, 4 tbsp Chopped Potato and pour in a little water.
Add 1/4th tsp salt along with 1/8th tsp black pepper, mix properly and cook for a few minutes.
Take off the flame, pour the soup in a blender and blend it till a soup like consistency is obtained.
Garnish with a coriander leaf.
