Potato Carrot Thick Soup With Butter Recipe

Potato carrot soup is a heartwarming, beautiful, hearty, full-flavoured soup. This soup is creamy without cream, slightly sweet due to the presence of carrots, and as cosy as your favourite blanket. It’s nutrient-dense and bone warming.

1/2 Diced Cup(71.0 gm) Carrot
1/4 Diced Cup(42.0 gm) Potato
1.0 Chopped Tsp(2.0 gm) Garlic
0.13 Powder Tsp(0.37 gm) Black Pepper
1/4 Tsp(1.0 gm) Salt
1.0 Tsp(4.0 gm) Butter
150.0 Ml(150.0 ml) Water
  • Heat 1 tsp butter in a frying pan at a low flame. Add 1 tsp chopped garlic and saute.

  • Once the garlic is slightly browned add 1/2 cup diced carrot, 1/4th cup diced potato, 1/4th tsp salt, 1/8th tsp black pepper and then add a little water.

  • Cover allowing it to simmer.

  • Once cooked, pour the soup in a blender and blend until a soup like consistency is obtained.

  • Garnish with a sprinkle of black sesame and a coriander leaf.

  • Serve hot.
