Crispy deep fried rolls stuffed with mashed peas and grated coconut making a nutrient and energy dense sanck for an evening snack.
In a bowl, add 2 tbsp grated fresh coconut, 2 tbsp boiled mashed peas, 1/4th tsp green chilli paste, 1/4th tsp grated ginger, 1/4th tsp salt, 1/2 tsp lemon juice and 1/2 tsp coriander leaves.
Mix well and keep aside.
For outer cover
Ina bowl add 1/4th cup boiled, mashed potato, 1 tbsp corn flour and knead it into a dough.
In a small portion stuff the mixture and shape into rolls.
Coat with 1 tbsp breadcrumbs and deep fry.
Serve hot peas coconut rolls with a dip, ketchup or chutney of your choice.
