Peas carrot soya chunks pulao is not only tasty rice recipe but also very nutritious. Soybeans are low in saturated fat and high in protein, vitamin C, and folate. They are also a good source of fiber, calcium, iron, magnesium, phosphorus, potassium. Peas are a good source of dietary fiber, Vitamin A, iron, folate, thiamin, Vitamin C and manganese. They also have a high level of Vitamin K. Carrots are a particularly good source of beta carotene, fiber, vitamin K1, potassium, and improved eye health.
In a pan, add 2 tsp oil, 1/8th cup julienne onion and saute until it is translucent
Add 1.5 tbsp peas, 1 tbsp chopped carrot, soaked soya chunks and saute it well
Add 1/4th tsp salt, 1/4th tsp haldi, 1/4th tsp red chilly powder, 1/4th tsp garam masala and mix it well
Add the cooked rice
Mix it well
Sprinkle 1/2 tsp chopped coriander leaves
