An all time favorite, famous throughout, a blend of a variety of vegetables and flavored with aromatic spices served with buttery pav.
Boil 1/4th cup potatoes
Boil 2 tbsp peas
For making Pav Bhaji
Heat a kadai, add 1 tsp oil, 1/4th tsp jeera, 1/2 tsp ginger garlic paste, 1/4th cup chopped onion, saute it well.
Then add 1/4th tsp salt, 1/4th cup chopped bottle gourd, 2 tbsp boiled peas, 3 tbsp chopped cauliflower, water as required, 1/2 tsp haldi, saute them well.
Then add 1/4th cup boiled and diced potato, saute well. Add water as required and cover with lid & cook for 5 minutes.
Remove the lid, mash the bhaji with a masher.
Add 1/2 cup chopped tomato,1 tbsp pav bhaji masala, 1 tbsp red chilly powder, 1 tsp dhania powder, 1/4th tsp amchur powder,1 tsp butter, mix and mash well. 2 tbsp chopped capsicum, mix and mash it well. Cover with lid, cook for 5 minutes. Mash them well,.
Garnish it with 1 tbsp chopped coriander leaves, mix it well
Serve it hot with pav and chopped onions.
