The spinach raita, rich in calcium and vitamin A, is a delicious combination of spinach, combined with curd, spices and seasonings. Raita can be served as a side or a condiment with any meal or can simply be eaten at snack time with crudites or lavash.
Blanch and puree 1 cup spinach
Take a mixing bowl pour in 1/2 cup curd and whisk until smooth.
Once the curd is smooth add 1/4th tsp jeera powder, 1/4th tsp chaat masala and 1/8th tsp salt.
Blend very well with a spoon and slowly fold in pureed spinach.
Making sure all the ingredients are evenly distributed, transfer to a serving bowl.
