A protein and iron packed dish usually paired with either rotis or rice is a perfect nutrient dense gravy.
Cook 3 tbsp moong dal and keep aside.
In a nonstick pan, heat 1.5 tsp oil.
Add 1/4th tsp rai, 1/4th tsp jeera, 1/4th tsp hing, 2 tbsp chopped onion and cook until they turn light brown.
Then add 2 tbsp chopped tomato, 1/2 tsp haldi and the cooked moong dal. Mix well.
Add 1/4th cup chopped spinach to the dal and mix again.
Add 1/2 tsp salt and water.
Cover and let it simmer for a while.
Stir the dal and sprinkle 1/4th tsp crushed jeera
Serve hot with rice.
