A great snack, loaded with vegetables and very easy to make.

  • For the green chutney

    In a mixie jar, add 1 tbsp chopped coriander leaves, 1/4th tbsp chopped pudina, 1/4th tsp chopped green chilli, 1/4th tsp chopped ginger, 1/8th tsp jeera powder, 1/8th tsp salt, 1/2 tsp lemon juice and blend it well.

  • For the sandwich mixture

    Heat a kadai, add 1/2 tsp oil, 2 tsp chopped capsicum, 2 tsp grated carrot, boiled sweet corn, 1 tbsp boiled and mashed potato, 1/4th tsp red chilly powder, 1/4th tsp salt and saute it well.

  • For the sandwich

    Heat a pan, add 1 tsp butter

  • Toast the bread slice on one side and remove it on a plate.

  • On the bread slice, apply green chutney

  • Then apply the sandwich mixture on it

  • Heat a pan, add 1 tsp butter

  • Roast it from another side

  • Add 1 tsp grated cheese

  • Serve hot.
