For the green chutney
In a mixie jar, add 1 tbsp chopped coriander leaves, 1 tbsp chopped pudina, 1/4th tsp chopped green chilli, 1/4th tsp chopped ginger, 1/4th tsp jeera powder, 1/8th tsp salt, 1/2 tsp lemon juice and blend it well.
For the sandwich mixture
Heat a kadai, add 3/4 tsp oil, 1 tbsp chopped capsicum, 1.5 tbsp grated carrot, 1 tbsp boiled sweet corn, 2 tbsp boiled and mashed potato, 1/4th tsp red chilly powder, 1/4th tsp salt and saute it well.
For the sandwich
Heat a pan, add 1 tsp butter
Toast the bread slice on one side and remove it on a plate.
On the bread slice, apply green chutney
Then apply the sandwich mixture on it
Heat a pan, add 1 tsp butter
Roast it from another side
Add 1 tsp grated cheese
Serve hot.
