This uttapam not only has proteins but good fat too from the fresh coconut used. It is a perfect alternative for kids who dont eat coconut chutney!
Soak 3 tbsp rice and 1 tbsp black urad dal seperately , blend it into a batter and ferment it overnight.
In a mixing bowl, add the batter, 2 tsp chopped onion, 1 tsp grated fresh coconut, 1/2 tsp chopped coriander leaves, 1/8th tsp salt and mix it well.
Take a frying pan, spread 1/2 tsp oil.
Pour the batter and spread it.
Cover & cook it.
flip the uttapam and cook on the other side.
Serve it hot.
