Mix Vegetable Paneer Rice Recipe

Mixed Vegetable Paneer Rice is a simple, and nutritious rice recipe that is easy and quick to make and packed with antioxidant rich spices and fiber that is kid friendly and healthy. This dish serves well raita and can even be packed into a lunchbox for school.

As Require(200.0 ml) Water
  • Take a thick base pressure cooker and heat 1/2 tsp oil in it.

  • To that add 1/4th cup of paneer cubes and sauté till golden brown.

  • Once done remove in a plate and keep aside.

  • In the same cooker, heat 1 tsp oil.

  • Add 1/2 bay leaf, 1 black cardamom, 3 black pepper corns, 2 cloves, 1 tbsp chopped onion and 1/2 tsp ginger garlic paste. Sauté until golden brown

  • Now add 1 tbsp chopped french beans, 1 tbsp fresh peas, 1 tbsp chopped carrot, 1 tbsp chopped cauliflower, 1 tsp chopped green chilli and mix well.

  • Then add 1/8th tsp haldi, 1/4th tsp salt, 1/2 cup washed basmati rice and 1/4th cup paneer cubes

  • Mix well and add water as required.

  • Add 1 tsp chopped coriander leaves and stir well.

  • Pressure cook for 2 whistles.

  • Serve hot
