Dry roast 1 tbsp ragi flour for 5 mins and keep aside.
Boil 1 cup water. Keep on low heat , add roasted ragi flour gently and stir continuously such that no lumps are formed.
Boil till it thickens.
Add 1/2 tsp salt to taste , mix well and continue to cook for 1 minute.
Cool the mix, add 1/4th cup Nestlé A+ Curd and whisk well. Add water as desired to dilute it.

Add 1 tbsp chopped mint leaves and mix well.
Heat 1 tsp coconut oil, add 1/8th tsp mustard seeds, 1/8th tsp jeera seeds , 3 curry leaves, 1/4th tsp grated ginger and 1/8th tsp hing.
Pour tempering on prepared ragi ambli .
Stir well, chill and serve.
