Minty Ragi Ambli Recipe

Minty Ragi Ambli is a delicious flavoured healthy summer drink from the state of Karnataka. It is a traditional drink made from Nestlé A+ Curds and finger millet. It cools down and aids in digestion.

1/2 Tsp(2.0 gm) Salt
30 Ml(30.0 ml) Water
1/8 Tsp(0.35 gm) Hing
1/4 Grated Tsp(0.47 gm) Ginger
3 Number(0.33 gm) Kadi Patta
1/4 Tsp(0.28 gm) Jeera
1/8 Tsp(0.44 gm) Rai
1 Tsp(4.0 gm) Coconut Oil
1 Chopped Tbsp(2.0 gm) Pudina
1 Flour Tbsp(6.0 gm) Ragi
1/2 Cup(60.0 gm) Nestlé A+ Curd
  • Dry roast 1 tbsp ragi flour for 5 mins and keep aside.

  • Boil 1 cup water. Keep on low heat , add roasted ragi flour gently and stir continuously such that no lumps are formed.

  • Boil till it thickens.

  • Add 1/2 tsp salt to taste , mix well and continue to cook for 1 minute.

  • Cool the mix, add 1/4th cup Nestlé A+ Curd and whisk well. Add water as desired to dilute it.

  • Add 1 tbsp chopped mint leaves and mix well.

  • Heat 1 tsp coconut oil, add 1/8th tsp mustard seeds, 1/8th tsp jeera seeds , 3 curry leaves, 1/4th tsp grated ginger and 1/8th tsp hing.

  • Pour tempering on prepared ragi ambli .

  • Stir well, chill and serve.
