Mint Coconut Rolls Recipe

Mint Coconut Rolls are deep-fried rolls stuffed with grated coconut, making them a nutrient-dense starter and a fun party snack. Mint gives the dish a refreshing flavour.

1/2 Boiled Mashed Cup(111.0 gm) Potato
2.0 Grated Tbsp(12.0 gm) Fresh Coconut
1.0 Chopped Tbsp(2.0 gm) Pudina
1.0 Tbsp(6.0 gm) Corn Flour
2.0 Tsp(4.0 gm) Bread Crumbs
1/2 Chopped Tsp(0.46 gm) Coriander Leaves
1/2 Tsp(2.0 ml) Lemon Juice
1/4 Tsp(1.0 gm) Green Chilli Paste
1/4 Grated Tsp(0.47 gm) Ginger
1/4 Tsp(1.0 gm) Salt
1.0 Tbsp(8.0 ml) Oil
  • For stuffing

    In a bowl, add 2 tbsp grated fresh coconut, 1 tbsp chopped pudina leaves, 1/4th tsp green chilly paste, 1/4th tsp grated ginger, 1/8th tsp salt, 1/2 tsp lemon juice, 1/2 tsp coriander leaves and mix well.

  • For outer cover

    In a bowl, add 1/2 cup boiled, mashed potato, 1 tbsp corn flour and knead into a dough.

  • Flatten the dough with your fingers.

  • In a small portion, stuff the prepared mixture.

  • Shape into rolls, coat with 2 tsp breadcrumbs.

  • Heat oil for frying, deep fry until golden brown on all sides.

  • Serve hot rolls with any dip of your choice.
