Matki chi usal is one staple food in most of the Maharashtrian households as it is very easy to make and very nutritious as well. Matki has high level of proteins, contain dietary fiber, Folate, vitamin B1, and minerals. They are a good source of potassium and iron.
Heat 2 tsp oil in a pan.
Add 1/4th tsp rai, 1/4th tsp jeera and let it crackle.
Add 2 tsp ginger garlic paste,1 tbsp of chopped onions, 1/4th cup chopped tomato and saute well.
Now add 1/2 tsp dhania powder, 1/4th tsp red chilli powder, and 1/4th tsp haldi.
Mix well adding a sufficient quantity of water.
Then add the cooked matki, cover with a lid and cook.
Season with1/4th tsp salt and finally garnish with1 tsp coriander leaves.
