Malabari (South Indian Vegetable) Curry Recipe

Malabari curry is a popular and nutritious South Indian delicacy that makes an excellent meal. Filled with seasonal vegetables, it adds richness to the gravy, has an aromatic spice flavour and is delicious.

  • In a kadhai, heat 2 tsp oil and add 1/8 tsp rai allow it to crackle and then add 4 no. kadi patta.

  • Saute well till kadi patta turns crispy.

  • Add 2 tbsp peas, 2 tbsp cauliflower, 2 tbsp chopped french beans, 2 tbsp boiled potato, white til for a healthy twist.

  • Saute the vegetables well.

  • Add water to the vegetables and prepared coconut chana dal paste saute this mixture well till the coconut is nicely roasted.

  • Add 1/8 tsp Haldi and 1/4 tsp salt and mix well.

  • Allow simmering for a while and turn off the heat.

  • Serve it with rice.
