Lentil soup is a heartwarming, beautiful, hearty, full-flavoured soup. The natural flavour of lentil is delicious, and along with a blend of few vegetables and selected spices, this soup becomes one of the best indeed. As a bonus lentil soup turns out to be a super healthy, protein-packed meal as well.
Overnight soak and pressure cook masoor dal, keep aside.
Heat 1 tsp oil in a frying pan at a low flame. Add 1/8th cup diced onion and sauté.
Once the onions start to become transparent, add 1 tsp chopped garlic, 1/8th cup diced carrots, 1 tbsp chopped celery, 3 tbsp of the previously soaked and cooked masoor dal and sauté.
Once slightly cooked, pour in a little water and add 1/4th tsp salt along with 1/8th tsp black pepper and mix properly.
Bringing it to a boil, allow the soup to simmer and cook.
Take off the flame, pour in a blender and blend to obtain a soup like consistency.
Garnish with a coriander leaf.
